This morning Libi came with me to MOPS to set up. Afterward Libi talked with Spencer while Stacy and I chatted.
Today was the day-- after months of asking Libi and I decided to make Gumbo. Not just any gumbo but Tiana's recipe out of her very own cookbook.
It took us a little time to find some of the ingredients, but we left with our cart full.
Mommy didn't realize how much time goes into making gumbo. Step #1: Toast the spices.
While that was going we had to peel the shrimp.
Libi was pretty good at it, but she usually only peeled half of the shrimp so Mommy was the final inspector.
We only had a pound of shrimp to peel...
but it felt like a lot!!!
It was a good experience for both of us-- thankfully the shrimp were all de-veined so that was easier for me.
Libi loved stirring the gumbo just like Tiana did in the movie.
It looked pretty good in the pot!
My big girl is almost tall enough to reach the counter tops-- that makes me just a little sad.
Our meal was all from the Tiana cookbook-- Yumbo Gumbo and Skillet Cornbread.
At first Miss Libs was a bit tentative...
there was a lot to look at in that bowl.
Our gumbo was full of shrimp, frankfurters, sausage, chicken, veggies, and rice.
Libi wasn't a huge fan, but at least she tried it.
She loved the cornbread most of all!
